Rosa Conti arrived in Winchester from Perugia in 1990 with a wooden box of her mother's recipe cards and the firm belief that pasta made by machine was not pasta at all. She opened Trattoria Sera the following year in a room that seated fourteen people.
Marco still travels to Umbria each year to taste and choose the wines himself, and Lucia now runs the room with the calm precision of someone who knows every regular by sight. The restaurant seats sixty-two now, but the pace has remained reassuringly unhurried.

The tagliatelle ragù is the best plate of pasta I've had outside of Bologna. Rosa's recipe is extraordinary. We've been coming every anniversary for nine years.
